Tonight we tried out a new recipe that I found in All You magazine. It was very yummy, very affordable & it made lots!! I doubled the recipe for my crew and the total cost was only $9.00!! Most everyone had seconds and we have a large bowl of leftovers for lunch tomorrow!!
Here's the original recipe:
1 1/2 lbs boneless chicken cut up in 1/2 in chunks
1 small onion diced
2 garlic cloves minced
2 cups small broccoli florets
1 cup petite diced tomatoes
1/2 cup parmesan cheese
Boil the pasta until it is al dente. Add the broccoli to the boiling pasta in the last 3 minutes. Drain.
While the pasta is boiling, saute the chicken, onions, & garlic until the chicken is done. Add the diced tomatoes and saute for 2 more minutes. Combine the pasta, broccoli & chicken together. Add parmesan cheese and stir.
This meal has great flavor and it's perfect for an easy summer dinner!! My whole family loved it!! Some of the kiddos added a little bit of Frank's Hot Sauce to theirs.
